How to Make the Best Infused Apple Cider Donuts

As we always say with any cannabis baking recipe, the quality of your ingredients can make or break the final result!

For infused apple cider donuts, you’ll want to use the best quality apple cider you can find. As in, the fresh kind you get from the apple orchard or your local farmer’s market. This will give you the best flavor that comes through even after baking. Of course, if you don’t have access, store-bought apple cider will work all the same for this recipe.

One of the things that makes apple cider donuts so popular is the light crunch of the cinnamon-sugar coating. If you prefer a little extra texture, we recommend using a mix of raw sugar, granulated sugar, and cinnamon. In this recipe, we used ½ a cup of granulated sugar. You can substitute it for ¼ cup raw sugar and a ¼ cup granulated sugar to get that extra bite in there.

INGREDIENTS

For the donuts:

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/2 cup granulated sugar
  • 4 tbsp unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup buttermilk, room temperature
  • 1 tsp vanilla extract
  • 1 – 1.5 tsp Live Resin Cooking Oil (approx. 5 mg per donut)

For the cinnamon sugar coating:

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter, melted

INSTRUCTIONS

  1. In a small saucepan, simmer the apple cider over medium heat until reduced. This should take about 10–15 minutes. Let it cool.
  2. Preheat your oven to 350°F (175°C) and grease a donut pan.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.
  4. In a separate bowl, whisk together the sugar, melted butter, egg, reduced apple cider, buttermilk, and vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Measure roughly 1 or 1.5 tsp of the Live Resin Cooking Oil (this will infuse each donut with approximately 5 mg THC) and stir it into the batter, ensuring even distribution.
  7. Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.
  8. Bake the donuts for 10–12 minutes or until a toothpick inserted into one comes out clean. Let them cool in the pan for about 5 minutes before transferring to a wire rack.
  9. In a small bowl, mix the granulated sugar and cinnamon. Lightly brush each cooled donut with melted butter (or dunk it, if you prefer) and then toss it in the cinnamon sugar mixture to coat.
